Jean-Georges Vongerichten, acclaimed chef and owner of a sprawling restaurant empire, will open the Kaua'i Grill Nov. 13 in the St. Regis Princeville Resort on Kaua'i.

Vongerichten often partners with Starwood properties via his Culinary Concepts by Jean-Georges firm. He is associated with more than a dozen restaurants, including JoJo, Vong and Matsugen in New York City, Prime Steakhouse in Las Vegas, Market in Paris, V and Rama in London. The venerable Princeville Resort has been remodeled and rebranded as the St. Regis and the dinner-only restaurant, perched over Hanalei Bay, will feature views as well as contemporary Island cuisine in Vongerichten's style, which eschews heavy sauces in favor of flavor-rich infusions.
